At first, I couldn't really decide on what recipe to post, because I have so many yummy ones, in English as well as in German... But then I chose this recipe, that a good friend of mine shared with me a few years back when I lived in Wheaton, Illinois: Rhubarb crisp! It is such a delicious afternoon treat! If you like rhubarb, you will love this!!! You should try it!
So, here it goes:
Rhubarb Crisp4 c rhubarb cut into 1”-2” pieces
1 c water
1 c sugar
4 Tab tapioca (quick cooking (minute)- not instant)
Cook until thick. Add 1 tsp vanilla.
1 c flour
¾ c oatmeal
1 c brown sugar
½ c butter
½ tsp cinnamon
Crumble together with fingers. Pat ½ into bottom of an 8x8 or 9x9 pan. Add rhubarb mixture. Sprinkle remaining oatmeal mixture over the top. Bake 35-40 minutes at 350.
